LIMÓN improves efficiency by 19% with Edda.ai
“Discover how Limón’s team is building on its operational turnaround with clearer numbers and more confident decisions.”

Susana Pinto
Founder & CEO at LIMÓN
For Susana Pinto and the team at LIMÓN, the next stage of growth starts with knowing the business is ready. Edda has helped them get closer to their numbers, spend less time preparing reports and make decisions with greater confidence, building on the operational improvements they were already making.
Building on the team’s work
LIMÓN serves fresh bowls across two Oslo locations, Frogner and Byporten, with quality and freshness at the heart of the business and ambitions to keep growing. For Susana, its Founder, CEO and Head of Operations, running the business today while preparing for the next location both depend on having a clear view of performance.
When LIMÓN joined Edda in November 2025, Susana and her colleagues were already turning the business around. They wanted better control over the numbers to understand where they stood and where to focus their efforts. At the time, preparing financial reports still meant manually bringing data together in Excel.
“We used to make staffing and purchasing decisions based on gut feeling and a month-old spreadsheet. Now we see it week to week, and that's the difference between guessing when to open a third location and actually knowing.”
- Susana Pinto, Founder & CEO, LIMÓN
Knowing where to focus each day
Today, Edda is part of LIMÓN’s daily routine. The team can follow sales across the business and then look more closely at individual products to understand what is driving performance.
That gives Susana and her colleagues a starting point for decisions about staffing, purchasing and where to direct their attention. They can see how sales are developing, explore the patterns behind them and use that understanding to decide what to do next.
Since implementing Edda last November, revenue has increased by over 11%, while efficiency (revenue per recorded working hour) has grown by almost 20%. At the same time, the business has significantly strengthened its profitability, with total employee costs falling by 4.5% as revenue grew during the comparison period. Edda gives the team a way to follow that progress and spot where there is still room to improve.
Less time preparing reports, more time using them
Edda has also simplified LIMÓN’s monthly financial reviews. Bringing the data together in one place has removed the need to manually consolidate it in Excel for those reports.
According to the team, reports that previously took more than an hour to prepare can now be created in around five minutes. That gives them more time to review performance and decide what to do with the information, while reducing the stress of preparing the numbers.
Confidence to grow
For Susana, that clearer view matters beyond the day-to-day. As LIMÓN considers expanding, she wants to understand when the business is ready to take the next step.
LIMÓN is currently evaluating additional locations in Oslo, and the same reporting discipline behind these numbers will apply from day one at the next site.
She says Edda is helping the team improve its results and feel more confident about growing because they know where they need to be and what they need to do. With a better understanding of how the business is performing, Susana and her team can approach that next step with greater confidence.
